In Florence, a bakery automates production management and cuts waste. In Campania, a dairy uses algorithms to optimize its pasteurization processes. Startups like Tuidi and Aflabox are bringing AI across the supply chain — from demand forecasting to real-time quality control. According to a PwC report, over 40% of Italian food tech startups have already implemented AI-based solutions.

This signals a deeper re-engineering of how food is produced — one where technology and tradition blend, rather than compete. Baking, like agriculture or gastronomy, becomes a stage where digital transformation is measured not just in terms of innovation, but cultural efficiency: doing better, with more intelligence, without losing the meaning behind the craft.

From product quality to strategic planning, artificial intelligence is becoming a key driver of change in the Italian agri-food industry. Automating production, predicting flows, choosing where to invest — it’s no longer about intuition. It’s about data.
